Finally, today I’m posting a savory recipe! It’s pretty obvious that I usually use Nux for sweet snacks and breakfasts but there are some savory dishes that I really love to make. 

This dressing is a delicious option for these summer days. It adds extra flavor to your veggies and you’ll get to include lots of them into your diet! Plus, it will leave you satisfied thanks to the high fiber content in veggies and nuts and the healthy fats in the dressing.

Spicy Cashew Dream Dressing 

  • 1/4 cup Cashew Dream or Peanut Crave 
  • 1/2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 teaspoons garlic paste
  • 2 tablespoons rice vinegar
  • 2 teaspoons sriracha sauce (more or less depending on your taste)
  • 3 tablespoons crushed cashews or peanuts (and a little more for garnishing)
  • 1 tablespoon water

 

  • For dressing: Place all ingredients into a bowl and whisk together until completely combined.
  • For salad: I normally add veggies until it looks colorful enough 🙂 (I never measure them). The veggies I usually include in this salad are: broccoli and green beans previously cooked, white and red cabbage, bell pepper, carrots, crushed cashews or peanuts and coriander.
  • Toss veggies with the dressing.
  • For serving: You can eat the salad just by its own but if you want to serve in the littles baskets as in the picture, carefully press into muffin molds a piece of whole wheat tortillas and bake for about 10-12 minutes. Allow them to cool before filling them with the salad.
  • Top with extra crushed cashews or peanuts and coriander.
