This is our first post in this blog! We will use this space mainly to share recipes and ideas to make Nux part of your daily diet but still, we’ll share other fun stuff too!

Today we’re going to share a cake recipe made of Walnut Holiday. It may look complicated because the list of ingredients is long, but actually is super easy and delicious! Give it a try!

Carrot Coconut Walnut Holiday Cake


  • 1 ½ cup whole wheat flour
  • 1 cup shredded carrot
  • ½ cup shredded coconut
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp ground ginger
  • ½ tsp sea salt
  • ½ cup Walnut Holiday
  • ½ cup applesauce (unsweetened)
  • 1 egg
  • 2 tsp vanilla extract
  • Preheat oven at 175ºC. Line a cake pan with parchment paper and grease it (we used coconut oil).
  • Mix dry ingredients in a bowl.
  • Whisk the rest of ingredients in a standing mixer or by hand.
  • Add dry ingredients to the wet mixture and mix until everything looks even.
  • Bake for 30 minutes. However, be aware that every oven is different!
