Banana Bread + Walnut Holiday = Makes me drool!

I made this recipe some weeks ago and I’ve been dreaming about it ever since, so I decided to bake another one for this weekend’s breakfast.

Enjoy it with a huge glass of milk… Yummy!

Banana Walnut Holiday Bread

(Adapted from Sally’s Baking Addiction)

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup packed light or dark brown sugar
  • 2 large eggs, room temperature preferred
  • 1/3 cup 80g Greek yogurt
  • 1/3 cup Walnut Holiday
  • 2 cups mashed bananas (about 4 large very ripe bananas)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • Preheat the oven to 175ºC. Lightly grease a loaf pan. Set aside.
  • Toss the flour, baking soda, salt, and cinnamon together until combined.
  • Cream the butter and sugar in a stand mixer on medium speed,
  • Add the eggs one at a time, beating well after each addition.
  • Beat in the yogurt, Walnut Holiday, mashed bananas and vanilla. Set aside.
  • Mix the dry ingredients into the wet ingredients. Slowly stir everything together until no more flour pockets remain.
  • Fold in the walnuts.
  • Pour the batter into the baking pan and bake for 60-65 minutes, loosely covering the bread with aluminum foil the first 30 minutes.
  • Let cool.
